Tips and tricks for making these vanilla cake sandwich cookies

If you are going to make these spooky cookies, here are some tips to help you get them just right!

  • Make sure that all of your cookies are the same size. Otherwise, your sandwich cookie will look lopsided and uneven.
  • Be extra careful and let the cookies cool down to room temperature before making them into sandwiches. You don’t want to fill them only to have your frosting melt out!
  • Don’t overfill your cookies with frosting — you’ll be risking it gushing out of the sides and make a huge mess. It will also make these vanilla sandwich cookies almost impossible to eat and no one wants that.
  • Store your sandwich cookies in a cool place to ensure that the frosting doesn’t soften too much. If your house is warm, keep them in the fridge and take them out an hour before serving.
  • If you don’t have the time or ingredients, you could use store-bought frosting instead. Just add the same amount of green food coloring.

Can I use a chocolate cake mix instead of vanilla for the cookies?

Yes! If you want to transform these vanilla sandwich cookies into chocolate cookies, you can use a chocolate cake mix instead.

Just keep in mind that chocolate cake tends to be more moist than vanilla cake. This might make slightly softer and more delicate cookies. So, be prepared for softer cookies that may break more easily as you put them together and chow down.

How to store the Halloween cookie sandwiches

If you don’t plan on eating these ghoulish cookies within a few days, you can store them in an airtight container. Or in a ziplock baggie.

If you want to really keep these cookies tasting just like the day that you made them, try storing in a metal container. Metal keeps cookies softer than plastic does. Just make sure the cookies are completely cooled before storing.
